Zaatar Yoghurt Flatbread
30 minutesServes 42 bottles from the rack
This is the flatbread we make when people show up unannounced. The dough is two ingredients, the topping is three, and the whole thing tastes like far more effort than it took.
Ingredients
- 2 cups maida or atta
- 1 cup thick curd, plus half cup for serving
- 2 tbsp AANYA Zaatar Powder
- 1 tsp AANYA Sumac Powder
- Olive oil, salt
- 1 tsp baking powder
Method
- 01
Knead flour, curd, baking powder and salt into a soft dough. Rest it 10 minutes.
- 02
Divide into 4, roll each into a rough oval. Rough is correct, neat is suspicious.
- 03
Mix the zaatar with 3 tablespoons of olive oil into a loose paste and spread it on each flatbread.
- 04
Cook on a screaming hot tawa or under the grill until the edges char, about 3 minutes a side.
- 05
Whisk the remaining curd with a pinch of salt, swoosh it on plates, lay the bread on top and dust everything with sumac.
