Piri Piri Roast Potatoes

The trick everyone skips: boil first, rough up the edges, then roast. The piri piri goes on in two rounds so it neither burns nor fades.

Ingredients

  • 750g potatoes, peeled, quartered
  • 2 tbsp AANYA Piri Piri Seasoning
  • 1 tsp AANYA Garlic Powder
  • 3 tbsp oil with a high smoke point
  • Salt
  • Lemon, for the end

Method

  1. 01

    Boil the potatoes in salty water for 8 minutes. Drain, then shake the pan hard to rough up every edge.

  2. 02

    Toss with oil, garlic powder and HALF the piri piri.

  3. 03

    Roast at 220C for 25 minutes, turning once, until deeply browned.

  4. 04

    Toss the hot potatoes with the remaining piri piri so it hits them fresh.

  5. 05

    Squeeze lemon over at the table. Serve before they vanish from the tray.
